OK, it was driving me crazy so I downloaded the manual and looked it up. It's on page 257, but it is the Proactive Driving Assist feature. I think if you turn that off it should address your issue.
There is another feature that does this but I'm not where I can look at it and tell you the name right now. When I picked mine up the sales guy said it's the only feature he always turns off because otherwise so many people complain about it hitting the brakes for them every time they let off...
Also on HUD, you can't see tachometer unless you disable the adaptive cruise control. Switch it to regular cruise control to see the tach arch on the HUD in full mode.
I have an Overtrail and I can only answer the first question. Yes, the ceiling vents are notably missing, and the backseat gets warm on hot days. I ended up getting all the windows tinted with nano ceramic film to help keep it cooler inside and that has made a big difference.
