You didn’t order one. They got an allocation that matched what you wanted, or they traded allocations with another dealer.
Toyota/Lexus schedule what they think people want and then allocate them to the dealers.

In New Orleans, having my LX (should be very close or identical pricing for GX) tinted (all windows including windshield, excluding sunroof) and full front PFF (hood, fenders, fender flares, bumper, mirrors). XPEL XR Plus tint and Ultimate Plus PPF:

I just bought and Lx and will add a GX in a few months. Considering the recall for Lexus vehicles is through later 2022 build dates, I feel my 2024 builds will be ok. If not and they later extend the recall, it will be a pain, but it will get fixed.
I believe production ran through Feb/March 2021. I bought mine in Jan 2021 with a Nov 2020 production date.

Yes, to me that is more premium. The seats without a solid backing look like they have a seat cover, are more prone to stretching and kicking from kids in the back seat.
